It’s one of the best holiday treats, in my opinion, and I usually have it every year. But I’ve been so busy lately that I haven’t realized that I don’t have one this Christmas. 😱 I don’t know what my mom and I are going to do with ourselves when there’s no Jamaican rum cake to eat for Christmas.

Well my first time seeing snow was amazing because it was one of many things I was eager to see and experience when I moved here. It looked beautiful and magical from out my window, but when I ran outside to happily dance in it, all that jolly good feeling went away with the biting cold. Now I like snow as long as I don’t have to be in it — walking in it, driving in it, standing in it, shoveling it, playing in it, etc. I want nothing to do with it except look at it.

Oh man! It tastes sooo good when made well and have lots of rum and wine in it. If there’s a Jamaican restaurant/store close by, some may have some in stock now (or they may be sold out, actually, since we mostly eat this around Christmas). You should ask for the black cake. It’s actually a fruit cake and sometimes have small bits of fruit in it. My aunt makes it every year. I think she starts on it in like August to start soaking the fruits in rum or wine.

I think the clear answer is you’ve got to learn how to bake rum cake in two days but then, I’m not the one who’d have to bake it…
